Sorry no photo this time, but trust me…they are delicious! I made my husband & son plain cheese but mine were a delicious concoction of all things yummy.
Ingredients:
- Cooked chicken, diced small
- Enchillada Sauce
- Shredded Cheese
- Spices (salt, pepper, garlic & chili powder)
- Black beans (drained)
- Spanish rice (I bought the bag of pre-cooked kind that you can microwave)
- Chopped black olives
- Large flour tortillas
Directions:
Preheat oven to 400 degrees. I thawed 2 frozen boneless skinless chicken breasts and cut into tiny bite sized pieces. I cooked them in a pan until they were no longer pink with all my spices. I then added the black beans, black olives & rice to the pan. Once the mixture was heated through, I put a good amount in the tortilla end, topped with shredded cheese and rolled up tightly. I made about 5 of these and covered with enchillada sauce. These were then baked in the oven for about 10-15 minutes.

I bought a new cookbook at a recent book fair we had at work. There are lots of recipes in it that are simple and have ingredients both my husband & son would eat so I had to buy it. This is one that I adapted for us but for the most part, it’s the same as was in the book. Try it, you’ll like it. Oh and it freezes well! Enjoy…


Ingredients:
- Cooked hamburger meat, crumbled
- Chopped onions
- Chopped carrots
- Minced garlic
- Cream of Mushroom soup (any kind will do)
- Cooked potatoes (I had leftover fried potatoes from breakfast)
- Salt/Pepper
- Top & bottom of pie crust shell (pre-made is fine)
Oven to 350 degrees. Cook hamburger until it’s just about done. Add chopped onions, carrots & garlic. Cook the meat until done & drain. Add back to pan and salt/pepper to taste. Add cream soup & cooked potatoes. Mix and simmer until warmed through. Put bottom of pie crust in pie pan or dish (I used square glass dish). Add mixture and then place top of pie shell on dish. I cut out circles just for kicks & giggles.
Bake at 350 degrees for 15 minutes. Turn heat up on oven to 400 degrees and cook another 10-15 minutes, making sure crust is not burning. Once crust is nicely browned, take out of oven & let cook for 5 minutes before cutting into and serving.

Cheesy Turkey Bacon Quiche
Ingredients:
- Pre-made pie pastry
- 3 eggs
- 1 1/2 Cups Milk
- 1/2 Cup melted butter/margarine
- 1/2 Cup Bisquick or other brand like it (I bought some from Aldi, tasted the same)
- 1 Cup Cheese
- Cooked turkey bacon cut up into small pieces
Preheat oven to 350 degrees. Combine eggs, milk, melted butter & bisquick into blender (I just wisked it in a bowl for about a minute and a half). Pour into pan with pie dough spread out like pie. Combine cheese & bacon & sprinkle on top. Bake for 40-45 minutes.
Cheesy Turkey Bacon Garlic Biscuits
Ingredients:
- 2 Cups Bisquick mix
- 6 slices turkey bacon cut into pieces
- 2/3 Cups milk
- 3/4 Cup cheese
- 1/4 Cup melted butter/margarine
- 2 tsp minced garlic (I used some that was already minced in a jar)
- 1/2 tsp garlic powder
Preheat oven to 400 degrees. Cook bacon & crumble/cut up. Mix bisquick, milk, cheese, bacon & garlic until it forms a soft dough (30-60 secs). Drop spoonfuls onto pan, bake 8-10 minutes. Melt butter, mix with garlic powder, brush on biscuits when done cooking.
Breakfast Sandwiches
Ingredients:
- Sandwich thins or english muffins
- Cooked turkey bacon
- Scrambled eggs
- Sliced cheese
- Butter
Spread butter on sandwich thins/english muffins. Place sliced cheese down, then scrambled eggs & top with cooked turkey bacon. Close sandwich and enjoy!
Monday night I made a very delicious dish from the label on my can of Campbell’s Cream of Mushroom soup. It was Chicken & Pasta Primavera. Prep time took a bit more than 5 minutes (this is what the can said) because I had to defrost my boneless chicken breasts (10 minutes), cut it up into bite sized pieces (5 minutes) and then cook it up (about 10 minutes). Then I had to cook up the pasta (it called for spaghetti noodles but I used bow tie pasta) which took about 15 minutes. Anyways, it tasted so good I packaged a bunch up for each day this week to eat at lunch at work. Try the recipe…you’ll love it!

Ingredients:
- 1 can (10 3/4 oz) Campbell’s Healthy Request Condensed Cream of Mushroom Soup
- 1/2 cup milk
- 3 tbsp grated parmesan cheese (I also added about 1/4 cup grated mozzarella cheese)
- 1/4 tsp garlic powder
- 1 bag (16 oz) frozen vegetables (I used frozen broccoli)
- 2 cups cubed cooked chicken (I cooked 3 chicken breasts cut up)
- Bow tie pasta cooked al dente
Heat soup, milk, cheeses, garlic powder & vegetables in saucepan over medium heat to a boil. Reduce heat to low. Cover and cook 10 minutes or until vegetables are tender crisp.
Stir chicken in saucepan and cook until mixture is hot and bubbling. Mix with pasta & serve.
The can says it yields 4 servings but I got 2 dishes that night for dinner & packaged up 5 days worth of lunches. I’m sure the calorie count was a bit off since I used extra cheese but can says each serving is 473 calories. You can check out more recipes on their website at www.campbellwellness.com.
I’ve seen this recipe around but have never tried it and since I’m getting tired of the same old Shake N Bake chicken dishes, I decided to search for something new online tonight. I took a little bit of one recipe and then just adapted it to fit my needs.

Ingredients:
3/4 stick real butter
Minced Garlic (about 2 cloves)
Chicken Breasts (boneless/skinless)
Bread Crumbs
Shredded Parmesan Cheese
Tarragon/Parsley/Italian Seasoning
Directions:
Heat oven to 400 degrees. Melt butter in saucepan and add garlic. Let sit and cool. In separate bowl, mix bread crumbs & spices along with cheese. Take defrosted chicken breasts and dip both sides in butter/garlic mixture. Completely coat and mash dry mixture on chicken, turning several times to make sure nothing is left wet. Place in dish to bake. Bake at 400 degrees for 30 minutes.
